Instructions
  1. In a pot, heat 3 tablespoons of olive oil over high heat. Sauté any cleaned mushrooms, meat, or vegetables suitable for rice with a pinch of salt until slightly cooked.
  2. Once sautéed, remove the ingredients from the pot and set them aside, leaving any remaining fat in the pot. Lower the heat.
  3. Add the chopped garlic and large spring onions to the pot. Sauté for about 10 minutes over medium heat until fragrant.
  4. Stir in 500 g of round-grain rice, mixing it well with a wooden spoon. Add back the reserved sautéed ingredients and season lightly.
  5. Slowly pour in 1.3 liters of hot broth or water while continuing to stir. Add more liquid as it gets absorbed.
  6. Reduce to very low heat and simmer for approximately 18 minutes, until the rice is tender.
  7. Remove from heat and stir in grated cheese, semi-whipped cream, and an additional tablespoon of olive oil to bring it all together.
  8. Garnish with chopped parsley and serve hot for an amazing meal!
