Instructions
  1. Trim the stem end off the 6 medium eggplants and clean them under running water. Slice them diagonally into 1 cm thick rounds and season the slices with salt.
  2. In a frying pan, pour enough frying oil to submerge the eggplant slices. Add 4 whole garlic cloves (with skins on) to the oil and heat it on low for about 10 minutes to infuse the oil with garlic flavor. Be careful not to let the garlic burn.
  3. After 10 minutes, increase the heat to medium-high to prepare for frying.
  4. Lightly coat the eggplant slices in flour, dip them into a beaten egg, and carefully place them into the hot oil, frying until they're golden and cooked through.
  5. Once fried, drain the eggplants on paper towels to remove excess oil, and serve them hot. Enjoy the satisfying crunch!
