  1. Begin by preparing the potato puree. In a pot, combine 250 ml of boiling water with 125 ml of milk and 150 g of potato flakes. Stir well with a spatula for around 5 minutes until fully mixed. Set aside 250 g of the finished puree for later use.
  2. Activate the yeast by lightly warming 25 ml of milk in the microwave. Add 40 g of fresh yeast to the milk and dissolve it carefully with your hands. Make sure the milk isn't too hot, as high temperatures will kill the yeast and prevent the blinis from rising.
  3. In a bowl, mix together the flour (250 g), sugar (40 g), salt (10 g), dissolved yeast, additional milk (500 ml), potato puree (250 g), and the egg yolks (4) until you have a homogeneous batter. Cover the bowl with plastic wrap and place it in a warm area to help with fermentation. Once it rises, gently deflate the batter with a whisk for about 3 seconds and cover again to let it rest.
  4. After resting, gently deflate the mixture once more and fold in the whipped egg whites (16) and a bit of pepper for flavor.
  5. In a medium non-stick skillet, add a small amount of butter for cooking. Pour a portion of the batter into the skillet to create a pancake about 1 cm thick. Cook until golden brown on both sides.
  6. Allow the blinis to rest briefly before serving. Enjoy them warm with your choice of delightful toppings!
