Instructions
  1. Blanch 100g of watercress and 100g of spinach in separate pots of salted boiling water for about 10 seconds each. Quickly transfer them to an ice bath to stop the cooking, then drain and set aside.
  2. In a pan, melt 50g of butter and sauté the diced chard stems (100g) until they are softened.
  3. Pour in 4 tablespoons of Martini, 6 tablespoons of heavy cream, and 10 tablespoons of strained chicken juice into the pan. Allow the mixture to reduce by half to concentrate the flavors.
  4. Add the chopped watercress and spinach to the sauce in the pan. Mix gently and season with salt to taste. Serve hot, enjoying the vibrant flavors and creamy texture.
