Instructions
  1. Slice all the vegetables except for the spinach and bok choy into thin julienne strips.
  2. In a pan, melt 200g of butter over low heat and sauté the sliced onion, garlic, leek, and chili until softened. Then, add the 200g of fresh spinach and the chopped bok choy.
  3. Mix the vegetables well and add a glass of water. Cover the pan and let it cook for about 5 minutes.
  4. Once cooked, squeeze the juice of two lemons into the pan, stirring to combine the flavors.
  5. Make four small wells in the vegetable mixture and crack 4 eggs into them. Season with salt and pepper. Cover and cook for an additional 2 minutes.
  6. Plate the shakshuka and add a dollop of Greek yogurt to each serving. Finally, garnish with sweet paprika for an extra touch.
