Instructions
  1. In a bowl, mix together 100 ml teriyaki sauce, 50 ml soy sauce, juice from 2 oranges, juice from 2 limes, and grated ginger. Marinate your fresh salmon (250 g) cut into cubes while prepping the rice.
  2. Finely chop 6 cloves of garlic (brunoise) and set aside.
  3. In a shallow pot or paella pan, sauté the garlic in extra virgin olive oil until golden. Add 200 g of basmati rice and cover with 1 liter of fish stock. Cook for about 10-12 minutes. When there are 5 minutes left, stir in 400 g of frozen peas and the chopped dill from 1 bunch to ensure they warm through.
  4. Once the rice is done, place the marinated salmon on top of the rice. The residual heat will cook it to a delicate mi-cuit level, making it safe to eat.
  5. For presentation, elegantly arrange the salmon over the rice and optionally decorate with dots of alioli for that extra flavor boost.
