Description

This easy bolognese pasta is a comforting dish that is versatile and family-friendly. It combines minced meat with vegetables, tomato paste, and a touch of red wine for depth. The sauce is nutrient-rich and can be made ahead of time for meal prep or freezing.

Instructions
  1. Prepare the vegetables by dicing the celery, carrot, and onion. Chop the parsley and set aside.
  2. Heat olive oil and butter in a large skillet on low-medium heat. Add the diced onion, celery, and carrot, and pan fry for a few minutes.
  3. Turn the heat to medium and add the minced meat. Break it up with a wooden spoon and mix with the vegetables.
  4. Once the meat has browned, add the bay leaf, thyme, and half the parsley.
  5. Stir in the tomato paste and cook for 1-2 minutes before adding the tomato sauce.
  6. Pour in the red wine if using, and season with salt, pepper, and sugar.
  7. Cover the pan with a lid and simmer for 40 minutes to an hour, stirring occasionally.
  8. Ten minutes before the sauce is ready, boil the pasta until al dente. Drain the pasta.
  9. Serve the sauce over the pasta and garnish with basil leaves and Parmesan cheese.

  • 500 grams minced pork meat or beef

  • 2 teaspoons butter
  • 2 teaspoons white sugar
