Instructions
  1. Make the garlic and ginger paste by peeling and roughly chopping the ingredients. Use a pestle and mortar to mash them into a paste.
  2. Add the chicken pieces to a bowl. Season with salt, add minced garlic and ginger, red chili powder, black pepper, soy sauce, lime juice, and brown sugar. Mix and marinate for 30 minutes.
  3. Combine flour and cornstarch in a mixing bowl. Season with salt and pepper, add garlic powder, and mix.
  4. In a separate bowl, whisk the eggs together.
  5. Dip chicken pieces into the egg, then the flour mixture, back into the egg, and finally in the panko crumbs.
  6. Heat oil to 300F. Fry chicken pieces for about 15 minutes. Drain excess oil on a kitchen towel.
