  1. Start by preparing the eggplants: peel them in a zebra pattern for added texture, then cut into 1 cm thick slices. Sprinkle them with salt and let them sit for about 30 minutes to drain excess moisture.
  2. After 30 minutes, rinse the eggplant slices and pat them dry to remove moisture. Dredge each slice in flour, ensuring to shake off the excess. In a pan, heat sunflower oil and fry the eggplant slices until golden brown on both sides. Season lightly with salt and place them on paper towels to drain excess oil.
  3. In a baking dish, start layering your ingredients like a lasagna: begin with a layer of fried eggplant, then add a layer of tomato sauce, followed by a mix of grated pecorino and parmesan cheese. Finish with a layer of fresh mozzarella slices. Repeat the layering process until you've used up your ingredients, aiming for at least two layers.
  4. Preheat your oven to 180°C (356°F) and bake the dish for 10 to 15 minutes, or until the cheese is thoroughly melted and bubbly. For that extra golden crust, switch to the broiler for a few minutes towards the end.
