Description

Instructions
  1. Prepare the chicken by removing any excess fat and gristle. Slice the chicken into pieces. Place the pieces into a bowl and season with salt and pepper.
  2. Finely chop the parsley and set it aside. Peel and chop the onion. Remove the stalks from the mushrooms and slice them. Peel and chop the garlic.
  3. Cook the pancetta in a large skillet until golden and crispy. Remove the pancetta and leave the rendered fat in the pan.
  4. Add the chicken pieces to the pan and cook until golden brown in the pancetta fat.
  5. Add the butter and onions to the pan. Cook until onions are translucent. Add garlic and cook gently. Add mushrooms and let them sweat, covering the pan if needed.
  6. Add white wine and cook until alcohol evaporates. Add herbs, stir, then add cream. Simmer until sauce thickens.
  7. Return chicken and pancetta to the pan. Stir to combine.
  8. Add peas, parsley, and mustard. Simmer until sauce thickens.

  • Portobello mushrooms

  • 4 cloves of garlic
  • 0.25 cup dry white wine
  • A handful of parsley
