Instructions
  1. Peel and dice the onion into 0.5cm cubes. Set aside.
  2. Peel and crush the garlic. Set aside.
  3. Remove the stems of the parsley, chop the leaves, and set them aside.
  4. Add olive oil to a large, non-stick pot over medium heat. Add the onions and cook for a few minutes until slightly soft. Add the garlic, and after a minute of stirring it, add the tomato paste and stir it in. Add the dried oregano, chili flakes, and sweet chili powder, and mix everything for a few seconds.
  5. Add the milk and stir together on high heat. Add in the salt and pepper. Bring the liquid to a boil.
  6. Once the milk mixture is boiling, add in the pasta. Stir the pasta into the liquid and cook it for 6-7 minutes or until the pasta is al dente. While it's cooking, add the stock cube for a flavor boost! Stir the pasta now and then as it cooks.
  7. Add the cheese a minute before the pasta is ready. Add in the cream just before it's ready. Turn the stove off and add the butter. Stir in the fresh parsley and serve.

  • 300 grams coquillettes pasta
  • 1 liter milk
  • 0.5 cup grated cheddar cheese
  • 0.5 cup grated parmesan cheese
  • 0.5 cup grated gruyere or emmental cheese
  • 0.5 cup grated mozzarella cheese
  • 200 cl light cream (20%)
  • 30 grams butter
  • 1 vegetable broth cube
  • 1 onion
  • 1 clove of garlic
  • A handful of parsley
  • 0.5 teaspoon chili flakes
  • 2 teaspoons sweet chili powder
  • 2 teaspoons tomato paste
  • 1.5 teaspoons oregano, dried
  • Black pepper and salt to taste
