Instructions
  1. Begin by cutting 800 g of boiling potatoes into cubes, leaving the skin on. Boil them in a large pot until they reach your preferred doneness.
  2. While the potatoes are cooking, heat a pan and sear 200 g of fresh tuna on all sides until it’s nicely cooked. Then set it aside.
  3. Marinate the seared tuna in a mixture of the juice of 1 lime, 30 ml of sesame oil, 20 ml of ponzu, and ½ teaspoon of Siracha. Reserve some of the marinade for decoration later.
  4. Prepare your veggies: finely chop 1 red onion (using the brunoise technique), slice the green onions (keeping white and green parts separate), and finely chop a bunch of parsley.
  5. In a bowl with the cooled potatoes, season with salt and pepper. Add 20 ml of Jerez vinegar, extra virgin olive oil, the white part of the green onions, red onion, chopped parsley, and stir in 4 tablespoons of IKY alioli. Adjust seasoning for salt and acidity as needed.
  6. Once marinated, slice the tuna into pieces and set aside for plating.
  7. To serve, create a base of potato salad on each plate, sprinkle with Smoked Pimentón de la Vera, garnish with the green part of the green onions, and place the sliced tuna alongside the potato dish. Top with a bit of the reserved marinade for extra flavor.
