Instructions
  1. Prepare the ingredients by cutting 300 grams of fresh salmon, 1 Smith apple, and 1 red onion into small cubes or brunoise, respectively. Finely slice 1 red chili.
  2. In a bowl, combine the salmon, apple, onion, and 30 grams of dried tomato. Squeeze the juice of 1 orange into the mixture and season with salt, pepper, 20 ml of sesame oil, and 10 ml of soy sauce. Mix gently and set aside.
  3. Mash 1 avocado with some lemon juice to prevent oxidation and to achieve a creamy consistency.
  4. Whip 50 ml of whipping cream until light and airy. Gently fold in 30 ml of Italian passata and 5 cl of vodka using enveloping movements.
  5. For assembly, take a balloon glass and carefully layer the salmon tartare mixture at the bottom. Follow with the vodka cream on top.
  6. Garnish your dish with Bloody Mary mousse and grate some lime peel over the top for an added burst of flavor.
