Instructions
  1. Bring a saucepan of water with a pinch of salt to a boil. Add 450 g of yellow kale leaves and cook them for about 5 minutes. Once cooked, quickly transfer the kale to an ice bath to stop the cooking process, then drain them well.
  2. Remove the thicker stems from the cooled kale leaves and slice them into very thin strips. This will help incorporate the kale nicely into the dish.
  3. In a mixing bowl, combine the chopped kale with 40 g of finely chopped shallots. Give it a good mix to combine the flavors.
  4. Next, prepare the dressing by mixing 200 ml of heavy cream with 80 ml of apple cider vinegar in another bowl. Whisk together until smooth, then pour it over the kale and shallots.
