Instructions
  1. In a pot, heat 4 tablespoons of olive oil over medium heat. Add a chopped spring onion and a pinch of salt, cooking until tender.
  2. Stir in 7 chopped, very ripe tomatoes and a splash of white wine. Allow the mixture to simmer over low heat for about 40 minutes.
  3. After 40 minutes, use a food mill or blender to pass the sauce for a smooth texture.
  4. In a skillet, heat the remaining olive oil. Add 4 halved garlic cloves and cook until golden. Remove the garlic, then add the floured tuna loins, searing two at a time for about 1 minute on each side until browned but juicy inside.
  5. Drain the tuna loins on a plate, then gently transfer them into the tomato sauce and maintain on low heat for at least another minute.
